Fried Curry Potatoes with Toppings





2 yellow potatoes grated
1/4 onion grated
2-1/2 T flax seed meal
1/4 c flour
season salt
pepper
2 T-1/4 c olive oil
large tomato chopped
cilantro chopped
curry

stir up potatoes, onion, flax, flour, salt and pepper. pour olive oil on it and stir gently to coat everything. throw it in a heated pan. let it set a minute or two. flip it over after it gets brown. let it set again and then chop at it while it cooks. flip it again and chop at it until everything is crispy and dark golden brown. lay it on a plate. top with a few dashes of curry, chopped tomato, and cilantro.
